Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar in a large mixing bowl for 3-5 minutes.
  3. Beat in the egg, followed by the lemon juice and lemon zest.
  4. Whisk together the all-purpose flour, baking powder, salt, and baking soda in a separate bowl.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Scoop tablespoon-sized portions of dough, roll them into balls, and then roll them in powdered sugar.
  8. Bake for 10-12 minutes until the edges crack and surfaces begin to golden.
  9. Allow cooling on the baking sheet for a few minutes before transferring to a wire rack.
