- 2 tablespoons lemon juice
- 4 tablespoons butter

- 1 pound baby potatoes, halved
- 2 cups broccoli florets
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Fill a large pot with water and boil the halved baby potatoes until tender, about 10-15 minutes. Once done, drain and set aside.
- In a skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic, sautéing until it becomes fragrant, about 1 minute.
- Stir in the lemon juice, salt, and pepper, blending all those exquisite flavors together, and then remove from heat.
- Place the salmon fillets in a baking dish, lovingly brushing the lemon butter mixture over them for that flavorful coating.
- In a separate bowl, toss the boiled potatoes with olive oil, salt, and pepper, ensuring they get a nice coating.
- Spread the potatoes on a baking sheet, allowing room for air circulation to achieve that crispy texture.
- Add the broccoli florets to the same baking sheet, drizzling with olive oil and seasoning with additional salt and pepper to taste.
- Roast the potatoes and broccoli in the oven for about 25-30 minutes, until both are crispy and beautifully golden.
- In the last 10 minutes of baking, slide the salmon into the oven, cooking until it’s perfectly flaky.
