Description
A delicious and healthy twist on traditional lasagna, made with layers of sweet potatoes, ricotta cheese, and marinara sauce.
Ingredients

- 2 large sweet potatoes, peeled and sliced thinly
- 2 cups ricotta cheese
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix ricotta cheese, egg, oregano, garlic powder, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer half of the sweet potato slices over the sauce.
- Spread half of the ricotta mixture over the sweet potatoes.
- Add another layer of marinara sauce, followed by the remaining sweet potatoes.
- Spread the remaining ricotta mixture and top with the remaining marinara sauce.
- Sprinkle mozzarella and Parmesan cheese on top.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
Notes
- For a spicier version, add red pepper flakes to the marinara sauce.
- Let the lasagna sit for 10 minutes before slicing to allow it to set.
- This dish can be made ahead of time and stored in the refrigerator before baking.
