Description

A delicious and healthy twist on traditional lasagna, made with layers of sweet potatoes, ricotta cheese, and marinara sauce.


Ingredients

  • 2 large sweet potatoes, peeled and sliced thinly
  • 2 cups ricotta cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix ricotta cheese, egg, oregano, garlic powder, salt, and pepper.
  3. Spread a layer of marinara sauce on the bottom of a baking dish.
  4. Layer half of the sweet potato slices over the sauce.
  5. Spread half of the ricotta mixture over the sweet potatoes.
  6. Add another layer of marinara sauce, followed by the remaining sweet potatoes.
  7. Spread the remaining ricotta mixture and top with the remaining marinara sauce.
  8. Sprinkle mozzarella and Parmesan cheese on top.
  9. Cover with foil and bake for 30 minutes.
  10. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Notes

  • For a spicier version, add red pepper flakes to the marinara sauce.
  • Let the lasagna sit for 10 minutes before slicing to allow it to set.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
