Description

Ingredients

  • 1 lb chicken thighs
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp gochujang (Korean chili paste)
  • 2 cups cooked rice
  • 1 cup kimchi
  • Green onions, for garnish

Instructions

  1. In a bowl, mix soy sauce, brown sugar, sesame oil, garlic, ginger, and gochujang to create the marinade.
  2. Add chicken thighs to the marinade and let it sit for at least 30 minutes.
  3. Preheat a grill or skillet over medium-high heat.
  4. Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked.
  5. While the chicken is cooking, prepare the rice according to package instructions.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing.
  7. Serve the sliced chicken over rice and top with kimchi and green onions.

Notes

  • For a spicier kick, add more gochujang to the marinade.
  • Feel free to use chicken breasts instead of thighs if preferred.
  • Kimchi can be store-bought or homemade.
