A delicious and flavorful dish featuring marinated Korean BBQ chicken served with rice and tangy kimchi.
Ingredients

- 1 lb chicken thighs
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp gochujang (Korean chili paste)
- 2 cups cooked rice
- 1 cup kimchi
- Green onions, for garnish
Instructions
- In a bowl, mix soy sauce, brown sugar, sesame oil, garlic, ginger, and gochujang to create the marinade.
- Add chicken thighs to the marinade and let it sit for at least 30 minutes.
- Preheat a grill or skillet over medium-high heat.
- Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked.
- While the chicken is cooking, prepare the rice according to package instructions.
- Once the chicken is cooked, let it rest for a few minutes before slicing.
- Serve the sliced chicken over rice and top with kimchi and green onions.
Notes
- For a spicier kick, add more gochujang to the marinade.
- Feel free to use chicken breasts instead of thighs if preferred.
- Kimchi can be store-bought or homemade.
