- Additional sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened butter and granulated sugar using an electric mixer until fluffy.
- Beat in the egg until fully combined.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually mix the dry ingredients into the butter-sugar mixture until a cohesive dough forms.
- Divide the dough into 3–4 equal parts, adding different Jello flavors to each portion and mix well.
- Chill the dough portions in the refrigerator for 15-20 minutes.
- Roll the chilled dough into balls, coat in sugar, and flatten slightly on the baking sheet.
- Bake for 8-10 minutes, until edges are set and tops crackle slightly.
- Cool cookies on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
