- 2 cups young green jackfruit, drained and shredded
- 1 tablespoon coconut oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons rendang curry paste
- 1 can coconut milk (400ml)
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- Salt to taste
- Slider buns
- Fresh cilantro for garnish
Instructions
- Heat coconut oil in a pan over medium heat.
- Add chopped onion, garlic, and ginger, and sauté until fragrant.
- Stir in the rendang curry paste and cook for another minute.
- Add the shredded jackfruit and mix well to coat with the spices.
- Pour in the coconut milk and soy sauce, and bring to a simmer.
- Cook for about 20 minutes, stirring occasionally, until the jackfruit is tender and the sauce thickens.
- Stir in lime juice and season with salt to taste.
- Assemble the sliders by placing the jackfruit mixture on slider buns and garnish with fresh cilantro.
Notes
- For extra flavor, let the jackfruit mixture sit for a few hours or overnight in the fridge before serving.
- These sliders can be served with pickled vegetables for added crunch.
- Adjust the spice level by adding more or less rendang curry paste.
