Ingredients

  • 2 cups young green jackfruit, drained and shredded
  • 1 tablespoon coconut oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons rendang curry paste
  • 1 can coconut milk (400ml)
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Salt to taste
  • Slider buns
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a pan over medium heat.
  2. Add chopped onion, garlic, and ginger, and sauté until fragrant.
  3. Stir in the rendang curry paste and cook for another minute.
  4. Add the shredded jackfruit and mix well to coat with the spices.
  5. Pour in the coconut milk and soy sauce, and bring to a simmer.
  6. Cook for about 20 minutes, stirring occasionally, until the jackfruit is tender and the sauce thickens.
  7. Stir in lime juice and season with salt to taste.
  8. Assemble the sliders by placing the jackfruit mixture on slider buns and garnish with fresh cilantro.

Notes

  • For extra flavor, let the jackfruit mixture sit for a few hours or overnight in the fridge before serving.
  • These sliders can be served with pickled vegetables for added crunch.
