- 4 cod fillets (about 5 oz each)
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- Salt and pepper, to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Pat the cod fillets dry with a paper towel and season with salt and pepper.
- Heat the olive oil over medium-high heat in a non-stick skillet.
- Place the cod fillets in the skillet and sear for 2-3 minutes per side until golden brown.
- Remove the cooked cod from the skillet and set aside.
- Reduce heat to medium, add butter to the skillet and let it melt.
- Add minced garlic and cook for about 30 seconds until fragrant.
- Pour in lemon juice and zest, stirring, and let it simmer for a minute.
- Return the cod to the skillet, spooning the garlic-lemon butter over the fillets, and cook for an additional 2-3 minutes.
- Sprinkle with chopped parsley before serving.
Notes
For a lighter version, you can substitute ghee or olive oil for butter. Prepping ingredients in advance makes for a smoother cooking experience.
