Description

Ingredients

  • 4 cod fillets (about 5 oz each)
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Pat the cod fillets dry with a paper towel and season with salt and pepper.
  2. Heat the olive oil over medium-high heat in a non-stick skillet.
  3. Place the cod fillets in the skillet and sear for 2-3 minutes per side until golden brown.
  4. Remove the cooked cod from the skillet and set aside.
  5. Reduce heat to medium, add butter to the skillet and let it melt.
  6. Add minced garlic and cook for about 30 seconds until fragrant.
  7. Pour in lemon juice and zest, stirring, and let it simmer for a minute.
  8. Return the cod to the skillet, spooning the garlic-lemon butter over the fillets, and cook for an additional 2-3 minutes.
  9. Sprinkle with chopped parsley before serving.

Notes

For a lighter version, you can substitute ghee or olive oil for butter. Prepping ingredients in advance makes for a smoother cooking experience.
