A deliciously crispy Reuben sandwich that combines savory corned beef, tangy sauerkraut, and melted cheese, all grilled to perfection.
Ingredients

- 2 slices of rye bread
- 4 oz corned beef
- 2 oz Swiss cheese
- 1/4 cup sauerkraut
- 2 tbsp butter
- 1 tbsp Russian or Thousand Island dressing
Instructions
- Butter one side of each slice of rye bread.
- Spread dressing on the unbuttered side of one slice.
- Layer corned beef, sauerkraut, and Swiss cheese on top of the dressing.
- Top with the second slice of bread, buttered side up.
- Heat a skillet over medium heat and place the sandwich in the skillet.
- Cook until golden brown, about 4-5 minutes, then flip and cook the other side until golden and the cheese is melted.
- Remove from skillet, slice in half, and serve hot.
Notes
- For extra crunch, use a panini press.
- Feel free to add pickles for an extra tangy flavor.
- Can substitute turkey for corned beef for a lighter option.
