A delicious and unique recipe for pickled beets with a spicy and sweet twist from hot honey.
Ingredients

			- 4 medium beets, peeled and sliced
- 1 cup apple cider vinegar
- 1/2 cup hot honey
- 1/2 cup water
- 1 teaspoon salt
- 1 teaspoon black peppercorns
- 1 teaspoon mustard seeds
- 1/2 teaspoon red pepper flakes
Instructions
- Prepare the beets by peeling and slicing them into desired shapes.
- In a saucepan, combine apple cider vinegar, hot honey, water, salt, black peppercorns, mustard seeds, and red pepper flakes.
- Bring the mixture to a boil over medium heat, stirring until the honey dissolves.
- Add the sliced beets to the saucepan and simmer for 10 minutes.
- Remove from heat and let cool slightly.
- Transfer the beets and pickling liquid to a jar and refrigerate for at least 24 hours before serving.
Notes
- For a milder flavor, reduce the amount of red pepper flakes.
- These pickled beets can be stored in the refrigerator for up to 2 weeks.
- Great as a side dish or topping for salads and sandwiches.
