  • 1 teaspoon mustard seeds
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Prepare the beets by peeling and slicing them into desired shapes.
  2. In a saucepan, combine apple cider vinegar, hot honey, water, salt, black peppercorns, mustard seeds, and red pepper flakes.
  3. Bring the mixture to a boil over medium heat, stirring until the honey dissolves.
  4. Add the sliced beets to the saucepan and simmer for 10 minutes.
  5. Remove from heat and let cool slightly.
  6. Transfer the beets and pickling liquid to a jar and refrigerate for at least 24 hours before serving.
