Description

Ingredients

  • 4 cups water or broth
  • 1 onion, chopped
  • 2 cloves garlic, minced

  • 1/2 teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil
  • 1 bay leaf
  • 1 smoked ham hock (optional)

Instructions

  1. Soak the black-eyed peas in water overnight, then drain.
  2. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the soaked black-eyed peas, rice, water or broth, salt, black pepper, cayenne pepper, bay leaf, and ham hock (if using).
  4. Bring to a boil, then reduce heat to low, cover, and simmer for about 30-40 minutes, or until the peas and rice are tender.
  5. Remove the bay leaf and ham hock, if used, and serve hot.

Notes

  • For a vegetarian version, omit the ham hock and use vegetable broth.
  • Hoppin’ John is traditionally served with collard greens and cornbread.
