A delicious and vibrant salad featuring roasted Brussels sprouts tossed in a sweet and tangy honey mustard dressing.

			- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1/4 cup apple cider vinegar
- Salt and pepper to taste
- 1/2 cup walnuts, chopped
- 1/2 cup dried cranberries
- 1/4 cup feta cheese, crumbled (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
- Spread the Brussels sprouts on a baking sheet and roast for 20-25 minutes until golden brown.
- In a small bowl, whisk together honey, Dijon mustard, and apple cider vinegar to make the dressing.
- Once the Brussels sprouts are done, let them cool slightly before tossing them with the dressing, walnuts, cranberries, and feta cheese.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
- For a vegan version, omit the feta cheese.
- Feel free to add other toppings like sliced apples or avocado.
- This salad can be made ahead of time; just add the dressing right before serving.
