Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1/4 cup apple cider vinegar
  • Salt and pepper to taste
  • 1/2 cup walnuts, chopped
  • 1/2 cup dried cranberries
  • 1/4 cup feta cheese, crumbled (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
  3. Spread the Brussels sprouts on a baking sheet and roast for 20-25 minutes until golden brown.
  4. In a small bowl, whisk together honey, Dijon mustard, and apple cider vinegar to make the dressing.
  5. Once the Brussels sprouts are done, let them cool slightly before tossing them with the dressing, walnuts, cranberries, and feta cheese.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

  • For a vegan version, omit the feta cheese.
  • Feel free to add other toppings like sliced apples or avocado.
