Ingredients

  • 1 cup pure pumpkin puree (unsweetened, no spices)
  • 2 cups oat flour (or finely blended oats)
  • 1/2 cup unsweetened applesauce
  • 1 tablespoon natural peanut butter (xylitol-free)
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, combine the pumpkin puree, unsweetened applesauce, and peanut butter, mixing until smooth.
  3. Gradually stir in the oat flour and ground cinnamon, adding more flour as needed to achieve a manageable dough.
  4. Roll small portions of dough into sticks measuring about 4–5 inches long and 1/2 inch thick.
  5. Place the sticks on the prepared baking sheet, leaving space between each.
  6. Bake for 20–25 minutes until golden brown and firm.
  7. Remove from the oven and cool completely on a wire rack before serving.

Notes

These sticks freeze beautifully. Store extras in an airtight container for up to one week in the fridge or three months in the freezer.
