- 1 cup powdered sugar (for filling)
- 1/4 cup creamy peanut butter (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the peanut butter, unsalted butter, granulated sugar, and brown sugar until smooth.
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Flatten each ball slightly with a fork to create a crisscross pattern.
- Bake for 10-12 minutes or until the edges are golden brown.
- While the cookies are baking, prepare the filling by mixing the powdered sugar and peanut butter until smooth.
- Once the cookies are cool, spread a layer of the peanut butter filling on the bottom of one cookie and sandwich it with another cookie.
