Ingredients

- 1 cup black beans
- 1 cup rice
- 2 sausages, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Rinse and soak the black beans overnight.
- In a large pot, sauté the onion, garlic, and bell pepper until soft.
- Add the sliced sausage and cook until browned.
- Stir in the soaked black beans, rice, vegetable broth, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until beans and rice are tender.
- Season with salt and pepper to taste before serving.
Notes
- For a spicier dish, add diced jalapeños.
- Can substitute sausage with a vegetarian option for a meatless meal.
