Ingredients

- 1 cup black beans, soaked overnight
- 1 cup long-grain rice
- 1 pound smoked sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, garlic, and bell pepper until softened.
- Add the sliced sausage and cook until browned.
- Stir in the soaked black beans, rice, chicken broth, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until the rice and beans are tender.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For a spicier version, add diced jalapeños.
- This dish can be made in a slow cooker for convenience.
- Leftovers can be stored in the refrigerator for up to 3 days.
