Ingredients

  • 1 cup long-grain rice
  • 1 pound smoked sausage, sliced

  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, garlic, and bell pepper until softened.
  2. Add the sliced sausage and cook until browned.
  3. Stir in the soaked black beans, rice, chicken broth, cumin, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until the rice and beans are tender.
  5. Serve hot, garnished with fresh herbs if desired.
