  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup brown rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until tender.
  3. In a saucepan, bring chicken broth to a boil. Add brown rice, reduce heat, cover, and simmer for 45 minutes or until rice is cooked.
  4. In a skillet, cook the diced chicken over medium heat until fully cooked, about 7-10 minutes.
  5. In a bowl, layer the cooked rice, roasted sweet potatoes, and chicken. Garnish with fresh parsley.
