- 1 lb chicken breast, diced
- 2 medium sweet potatoes, peeled and cubed
- 1 cup brown rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until tender.
- In a saucepan, bring chicken broth to a boil. Add brown rice, reduce heat, cover, and simmer for 45 minutes or until rice is cooked.
- In a skillet, cook the diced chicken over medium heat until fully cooked, about 7-10 minutes.
- In a bowl, layer the cooked rice, roasted sweet potatoes, and chicken. Garnish with fresh parsley.
