Ingredients

  • 2 cups cooked chicken, shredded
  • 1 medium head of cauliflower, chopped
  • 1 cup Greek yogurt
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 5-7 minutes. Stir in minced garlic and cook for an additional minute.
  3. Combine shredded chicken, chopped cauliflower, Greek yogurt, half of the shredded cheese, chicken broth, salt, pepper, thyme, and paprika in a large bowl. Mix until well incorporated.
  4. Transfer the mixture to a prepared baking dish, spreading it evenly.
  5. Sprinkle the remaining cheese on top.
  6. Bake for 30-35 minutes until the cauliflower is tender and the top is golden brown.
  7. Allow the casserole to cool slightly before serving.

Notes

You can assemble the casserole a day in advance and refrigerate it. Add 10-15 minutes to the baking time. Consider using air fryer for a quicker option.
