- 2 cups cooked chicken, shredded
- 1 medium head of cauliflower, chopped
- 1 cup Greek yogurt
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon paprika
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 5-7 minutes. Stir in minced garlic and cook for an additional minute.
- Combine shredded chicken, chopped cauliflower, Greek yogurt, half of the shredded cheese, chicken broth, salt, pepper, thyme, and paprika in a large bowl. Mix until well incorporated.
- Transfer the mixture to a prepared baking dish, spreading it evenly.
- Sprinkle the remaining cheese on top.
- Bake for 30-35 minutes until the cauliflower is tender and the top is golden brown.
- Allow the casserole to cool slightly before serving.
Notes
You can assemble the casserole a day in advance and refrigerate it. Add 10-15 minutes to the baking time. Consider using air fryer for a quicker option.
