- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup almond milk
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the mashed bananas, almond milk, honey (or maple syrup), and applesauce.
- In another bowl, mix the rolled oats, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- If desired, fold in the chopped nuts or chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack to cool completely.
Notes
- Store muffins in an airtight container for up to 5 days.
- These muffins can be frozen for up to 3 months.
- Feel free to substitute the almond milk with any other milk of your choice.
