  • 2 cups water

  • 1/4 cup slivered almonds
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey

Instructions

  1. Rinse the wild rice under cold water.
  2. In a pot, combine wild rice and water; bring to a boil.
  3. Reduce heat, cover, and simmer for about 45 minutes or until rice is tender.
  4. Drain any excess water and let the rice cool.
  5. In a large bowl, combine the cooled wild rice, cranberries, celery, red bell pepper, green onions, parsley, and almonds.
  6. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Chill in the refrigerator for at least 30 minutes before serving.
