			- 1 cup wild rice
- 2 cups water
- 1/2 cup dried cranberries
- 1/2 cup chopped celery
- 1/2 cup diced red bell pepper
- 1/4 cup chopped green onions
- 1/4 cup chopped parsley
- 1/4 cup slivered almonds
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Rinse the wild rice under cold water.
- In a pot, combine wild rice and water; bring to a boil.
- Reduce heat, cover, and simmer for about 45 minutes or until rice is tender.
- Drain any excess water and let the rice cool.
- In a large bowl, combine the cooled wild rice, cranberries, celery, red bell pepper, green onions, parsley, and almonds.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For added flavor, consider adding feta cheese or goat cheese.
- This salad can be made a day in advance for better flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
