Ingredients

  • 1/2 cup celery, diced
  • 1/2 cup grapes, halved
  • 1/4 cup walnuts, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 4 slices of whole grain bread
  • Leafy greens for serving

Instructions

  1. In a large bowl, combine the shredded chicken, celery, grapes, and walnuts.
  2. In a separate small bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper.
  3. Pour the mayonnaise mixture over the chicken mixture and stir until well combined.
  4. Toast the bread slices if desired.
  5. Spread the chicken salad mixture onto two slices of bread.
  6. Add leafy greens on top and cover with the remaining slices of bread.
  7. Cut the sandwiches in half and serve immediately.
