Description
A delicious and nutritious Harvest Chicken Salad Sandwich perfect for lunch or a light dinner.
Ingredients

			- 2 cups cooked chicken, shredded
- 1/2 cup celery, diced
- 1/2 cup grapes, halved
- 1/4 cup walnuts, chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 4 slices of whole grain bread
- Leafy greens for serving
Instructions
- In a large bowl, combine the shredded chicken, celery, grapes, and walnuts.
- In a separate small bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper.
- Pour the mayonnaise mixture over the chicken mixture and stir until well combined.
- Toast the bread slices if desired.
- Spread the chicken salad mixture onto two slices of bread.
- Add leafy greens on top and cover with the remaining slices of bread.
- Cut the sandwiches in half and serve immediately.
Notes
- For a lighter version, use Greek yogurt instead of mayonnaise.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
- Feel free to add other ingredients like apples or cranberries for extra flavor.
