- 4 medium zucchinis, sliced
- 1 pound ground meat (beef, turkey, or chicken)
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup chopped bell peppers
- 1 cup chopped onions
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Brown the ground meat in a large skillet over medium heat. Sprinkle in salt, pepper, and Italian seasoning.
- Layer half of the sliced zucchini at the bottom of a large baking dish.
- Add half of the cooked ground meat on top of the zucchini, followed by half of the marinara sauce and half of the cheese.
- Repeat the layers with the remaining zucchini, ground meat, marinara sauce, and cheese.
- Top with chopped bell peppers and onions.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the cheese is golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
Allowing zucchini to drain after slicing is crucial to avoid a soggy casserole. Customize with different proteins or vegetables as desired.
