A light and delicious casserole that brings together classic pizza flavors with wholesome ingredients, perfect for any meal.


Ingredients

  • 4 medium zucchinis, sliced
  • 1 pound ground meat (beef, turkey, or chicken)
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground meat in a large skillet over medium heat. Sprinkle in salt, pepper, and Italian seasoning.
  3. Layer half of the sliced zucchini at the bottom of a large baking dish.
  4. Add half of the cooked ground meat on top of the zucchini, followed by half of the marinara sauce and half of the cheese.
  5. Repeat the layers with the remaining zucchini, ground meat, marinara sauce, and cheese.
  6. Top with chopped bell peppers and onions.
  7. Cover with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, until the cheese is golden and bubbly.
  9. Let it cool for a few minutes before serving.

Notes

Allowing zucchini to drain after slicing is crucial to avoid a soggy casserole. Customize with different proteins or vegetables as desired.
