- 300g Watermelon, cubed
- 2 cups Arugula or mixed greens
- 2 tablespoons Olive oil

Instructions
- Preheat the grill to medium-high heat.
- Slice the halloumi cheese into thick slices.
- Brush the halloumi slices with olive oil.
- Grill the halloumi for about 2-3 minutes on each side until golden brown.
- In a large bowl, combine the cubed watermelon and arugula.
- Drizzle with balsamic vinegar and season with salt and pepper.
