Ingredients

- 4 ears of corn
- 1 cup cowboy candy (sweet pickled jalapeños)
- 1/2 red onion, diced
- 1/2 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Grill the corn for about 10-15 minutes, turning occasionally until charred.
- Remove corn from the grill and let it cool slightly.
- Once cool, cut the kernels off the cob and place them in a mixing bowl.
- Add cowboy candy, diced red onion, chopped cilantro, lime juice, salt, and pepper to the bowl.
- Toss everything together until well combined.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld.
Notes
- For a spicier salsa, add more cowboy candy or some diced fresh jalapeños.
- This salsa pairs well with grilled meats and can be used as a dip with tortilla chips.
