Ingredients

  • 1 cup cowboy candy (sweet pickled jalapeños)
  • 1/2 red onion, diced

  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Grill the corn for about 10-15 minutes, turning occasionally until charred.
  3. Remove corn from the grill and let it cool slightly.
  4. Once cool, cut the kernels off the cob and place them in a mixing bowl.
  5. Add cowboy candy, diced red onion, chopped cilantro, lime juice, salt, and pepper to the bowl.
  6. Toss everything together until well combined.
  7. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
