Instructions

  1. Boil the potatoes in salted water until tender, about 10-15 minutes.

  3. Drain the vegetables and rinse under cold water to stop the cooking process.
  4. In a small bowl, whisk together the olive oil, Dijon mustard, apple cider vinegar, salt, and pepper.
  5. In a large bowl, combine the potatoes and green beans, then pour the dressing over the top.
  6. Toss gently to combine and coat the vegetables with the dressing.
  7. Garnish with fresh parsley before serving.
