- 2 cups green beans, trimmed
- 2 cups potatoes, diced
- 1/4 cup olive oil
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar

- Fresh parsley, chopped (for garnish)
Instructions
- Boil the potatoes in salted water until tender, about 10-15 minutes.
- Add the green beans to the pot and cook for an additional 3-5 minutes until bright green and tender-crisp.
- Drain the vegetables and rinse under cold water to stop the cooking process.
- In a small bowl, whisk together the olive oil, Dijon mustard, apple cider vinegar, salt, and pepper.
- In a large bowl, combine the potatoes and green beans, then pour the dressing over the top.
- Toss gently to combine and coat the vegetables with the dressing.
- Garnish with fresh parsley before serving.
Notes
- For added flavor, consider adding chopped red onion or cherry tomatoes.
- This salad can be served warm or chilled.
