A delicious and flavorful dish featuring Greek lamb meatballs served over lemon-infused rice.
Ingredients

- 1 lb ground lamb
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup rice
- 2 cups chicken broth
- 1 lemon, juiced and zested
- Olive oil for cooking
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine ground lamb, breadcrumbs, parsley, Parmesan, egg, garlic, oregano, salt, and pepper. Mix well.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake the meatballs for 20-25 minutes or until cooked through.
- While the meatballs are baking, rinse the rice under cold water.
- In a pot, combine the rice, chicken broth, lemon juice, and lemon zest. Bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes until the rice is tender.
- Serve the meatballs over the lemon rice and drizzle with olive oil.
Notes
- For extra flavor, add more herbs to the meatball mixture.
- Serve with a side of Greek yogurt or tzatziki sauce.
- Leftovers can be stored in the refrigerator for up to 3 days.
