  • 4 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 cup of flour, powdered sugar, and softened butter to form a crust.
  3. Press the mixture into the bottom of a greased 9×13 inch baking dish.
  4. Bake the crust for 15 minutes or until lightly golden.
  5. In another bowl, whisk together granulated sugar, 1/4 cup flour, eggs, lemon juice, lemon zest, and baking powder until smooth.
  6. Pour the lemon mixture over the baked crust.
  7. Bake for an additional 20-25 minutes, or until the filling is set.
  8. Allow to cool completely before cutting into bars.
  9. Dust with powdered sugar before serving.
