A quick and easy recipe for pickled radishes with a delicious ginger soy flavor.

			- 1 bunch of radishes, trimmed and sliced
- 1/2 cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 tablespoon grated fresh ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- In a bowl, combine soy sauce, rice vinegar, sugar, grated ginger, sesame oil, and red pepper flakes.
- Whisk until the sugar is dissolved.
- Add the sliced radishes to the mixture and stir to coat.
- Transfer the radishes and pickling liquid to a jar.
- Seal the jar and refrigerate for at least 1 hour before serving.
Notes
- These pickled radishes can be stored in the refrigerator for up to 2 weeks.
- Adjust the sugar and spice levels to taste.
- Great as a side dish or topping for salads and sandwiches.
