Ingredients

- 1.5 pounds fingerling potatoes
- 4 cloves garlic, minced
- 2 tablespoons fresh sage, chopped
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the fingerling potatoes, then cut them in half lengthwise.
- In a large bowl, combine the potatoes, minced garlic, chopped sage, olive oil, salt, and pepper.
- Toss until the potatoes are well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and tender, stirring halfway through.
- Remove from the oven and serve hot.
Notes
- For extra flavor, add a sprinkle of Parmesan cheese before serving.
- These potatoes pair well with grilled meats or as part of a vegetarian meal.
