Description

Crispy smashed potatoes topped with roasted garlic and Parmesan cheese for a rich, savory side dish.


Ingredients

  • 2 pounds baby potatoes
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a large pot, boil the baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.
  3. On a baking sheet, lay the potatoes flat and gently smash each one with a fork or glass.
  4. Drizzle the smashed potatoes with olive oil, and sprinkle with minced garlic, salt, and pepper.
  5. Bake in the preheated oven for 20-25 minutes until golden and crispy.
  6. Remove from oven and sprinkle with Parmesan cheese. Return to oven for an additional 5 minutes to melt the cheese.
  7. Garnish with fresh parsley and serve hot.

Notes

For a quicker preparation, use smaller baby potatoes and consider making them in an air fryer.
