- 2 pounds baby potatoes
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 450°F (230°C).
- In a large pot, boil the baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.
- On a baking sheet, lay the potatoes flat and gently smash each one with a fork or glass.
- Drizzle the smashed potatoes with olive oil, and sprinkle with minced garlic, salt, and pepper.
- Bake in the preheated oven for 20-25 minutes until golden and crispy.
- Remove from oven and sprinkle with Parmesan cheese. Return to oven for an additional 5 minutes to melt the cheese.
- Garnish with fresh parsley and serve hot.
Notes
For a quicker preparation, use smaller baby potatoes and consider making them in an air fryer.
