Instructions
- In a bowl, combine the shredded chicken, minced garlic, and Parmesan cheese. Season with salt and pepper.
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Place one tortilla in the skillet and spread half of the chicken mixture on one half of the tortilla.
- Fold the tortilla over and cook until golden brown, about 3-4 minutes per side.
- Repeat with the remaining tortillas and chicken mixture.
- Slice the quesadillas into wedges and garnish with fresh parsley before serving.

- For extra flavor, add some sautéed vegetables like bell peppers or onions.
