- 4 large bell peppers
- 1 pound shrimp, peeled and deveined
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1 cup cooked rice (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, melt the butter over medium heat and add the minced garlic.
- Add the shrimp, paprika, salt, and black pepper to the skillet and cook until the shrimp are pink and cooked through.
- Stir in the cooked rice (if using) and chopped parsley.
- Stuff the mixture into the prepared bell peppers.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25-30 minutes, until the peppers are tender.
- Remove the foil and bake for an additional 5-10 minutes to brown the tops.
- Serve warm and enjoy!
Notes
- Feel free to add cheese on top before the final baking for extra flavor.
- These can be made ahead of time and stored in the refrigerator before baking.
