Ingredients

  • 4 large bell peppers
  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1 cup cooked rice (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, melt the butter over medium heat and add the minced garlic.
  4. Add the shrimp, paprika, salt, and black pepper to the skillet and cook until the shrimp are pink and cooked through.
  5. Stir in the cooked rice (if using) and chopped parsley.
  6. Stuff the mixture into the prepared bell peppers.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 25-30 minutes, until the peppers are tender.
  9. Remove the foil and bake for an additional 5-10 minutes to brown the tops.
