- 4 medium zucchinis, spiralized
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon thyme
- 1 cup shredded Gruyère cheese
- 1 cup beef or vegetable broth
- 1 tablespoon balsamic vinegar
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and add the sliced onions.
- Cook the onions, stirring frequently, until they are caramelized, about 20-25 minutes.
- Add salt, pepper, thyme, broth, and balsamic vinegar to the skillet and stir to combine.
- In a baking dish, layer the spiralized zucchini and pour the onion mixture over the top.
- Sprinkle the shredded Gruyère cheese evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
