- 1 cup natural peanut butter
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it lightly.
- Add peanut butter, honey (or maple syrup), eggs, baking soda, vanilla extract, and salt to a mixing bowl. Mix until smooth.
- Fold in chocolate chips if desired.
- Spoon the batter into the muffin tin, filling each cup about three-quarters full.
- Bake for 15-20 minutes, or until a toothpick comes out clean.
- Cool slightly in the tin before removing.
Notes
Store muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freeze for up to 3 months.
