Description

Delicious flourless peanut butter muffins that are moist, rich, and gluten-free. Perfect for breakfast or a sweet treat.


Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it lightly.
  2. Add peanut butter, honey (or maple syrup), eggs, baking soda, vanilla extract, and salt to a mixing bowl. Mix until smooth.
  3. Fold in chocolate chips if desired.
  4. Spoon the batter into the muffin tin, filling each cup about three-quarters full.
  5. Bake for 15-20 minutes, or until a toothpick comes out clean.
  6. Cool slightly in the tin before removing.

Notes

Store muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freeze for up to 3 months.
