Ingredients

  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. Whisk together the peanut butter, honey (or maple syrup), eggs, and vanilla extract until smooth and creamy.
  3. Add the cocoa powder, baking soda, and salt, mixing until just combined.
  4. Fold in the chocolate chips gently if desired.
  5. Pour the batter into each muffin liner, filling about two-thirds full.
  6. Bake for 12-15 minutes, until a toothpick comes out clean.
  7. Cool in the tin for a few minutes before transferring to a wire rack.
