- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- Whisk together the peanut butter, honey (or maple syrup), eggs, and vanilla extract until smooth and creamy.
- Add the cocoa powder, baking soda, and salt, mixing until just combined.
- Fold in the chocolate chips gently if desired.
- Pour the batter into each muffin liner, filling about two-thirds full.
- Bake for 12-15 minutes, until a toothpick comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack.
