Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 cup rice, uncooked
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, uncooked rice, black beans, corn, diced bell pepper, and salsa in a large mixing bowl.
  3. Pour in the chicken broth and sprinkle in the cumin, chili powder, salt, and pepper. Mix well.
  4. Transfer the mixture into a greased casserole dish, spreading it out evenly.
  5. Cheese the top with shredded cheese.
  6. Bake covered with aluminum foil for 30 minutes.
  7. Remove the foil and bake for an additional 15 minutes until cheese is bubbling and golden.
  8. Cool for a few minutes before serving.

Notes

This dish can be prepared ahead of time and refrigerated before baking. It also freezes well.
