- 1 lb chicken breast, cooked and shredded
- 1 cup rice, uncooked
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the shredded chicken, uncooked rice, black beans, corn, diced bell pepper, and salsa in a large mixing bowl.
- Pour in the chicken broth and sprinkle in the cumin, chili powder, salt, and pepper. Mix well.
- Transfer the mixture into a greased casserole dish, spreading it out evenly.
- Cheese the top with shredded cheese.
- Bake covered with aluminum foil for 30 minutes.
- Remove the foil and bake for an additional 15 minutes until cheese is bubbling and golden.
- Cool for a few minutes before serving.
Notes
This dish can be prepared ahead of time and refrigerated before baking. It also freezes well.
