- 2 English muffins
- 4 large eggs
- 4 slices of cheese (cheddar or your choice)
- 4 slices of cooked bacon or sausage patties
- Salt and pepper to taste
- Butter for toasting
Instructions
- Split the English muffins in half and toast them until golden brown.
- In a skillet, cook the bacon or sausage until crispy. Remove and set aside.
- In the same skillet, crack the eggs and cook them to your desired doneness, seasoning with salt and pepper.
- Place a slice of cheese on each egg and let it melt slightly.
- Assemble the sandwiches by placing the egg and cheese on the bottom half of the muffin, followed by the bacon or sausage, and then the top half of the muffin.
- Spread a little butter on the outside of the muffins and grill them in the skillet until golden brown on both sides.
