Ingredients

  • 2 English muffins
  • 4 large eggs
  • 4 slices of cheese (cheddar or your choice)
  • 4 slices of cooked bacon or sausage patties
  • Salt and pepper to taste
  • Butter for toasting

Instructions

  1. Split the English muffins in half and toast them until golden brown.
  2. In a skillet, cook the bacon or sausage until crispy. Remove and set aside.
  3. In the same skillet, crack the eggs and cook them to your desired doneness, seasoning with salt and pepper.
  4. Place a slice of cheese on each egg and let it melt slightly.
  5. Assemble the sandwiches by placing the egg and cheese on the bottom half of the muffin, followed by the bacon or sausage, and then the top half of the muffin.
  6. Spread a little butter on the outside of the muffins and grill them in the skillet until golden brown on both sides.
