Description

Ingredients

  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced vegetables (bell peppers, onions, or spinach)
  • 1/2 cup cooked and crumbled sausage or bacon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  3. Add the shredded cheese, diced vegetables, and cooked meat (if using) to the egg mixture and stir to combine.
  4. Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until the muffins are set and lightly golden on top.
  6. Allow to cool for a few minutes before removing from the tin. Serve warm or store in the refrigerator for later.
