- 6 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced vegetables (bell peppers, onions, or spinach)
- 1/2 cup cooked and crumbled sausage or bacon (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Add the shredded cheese, diced vegetables, and cooked meat (if using) to the egg mixture and stir to combine.
- Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until the muffins are set and lightly golden on top.
- Allow to cool for a few minutes before removing from the tin. Serve warm or store in the refrigerator for later.
