- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 cup sweet corn, canned or frozen
- 1/2 cup mayonnaise
- 1/4 cup lime juice
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup cilantro, chopped
Instructions
- In a large skillet, cook the diced chicken over medium heat until fully cooked.
- Add the sweet corn to the skillet and cook for an additional 2-3 minutes.
- In a bowl, mix together the mayonnaise, lime juice, chili powder, garlic powder, salt, and black pepper.
- Combine the cooked chicken and corn with the mayonnaise mixture.
- Serve the chicken corn mixture over a bed of cooked rice.
- Garnish with chopped cilantro before serving.
Notes
- For a spicier version, add diced jalapeños to the chicken mixture.
- This dish can be served warm or cold.
