A quick and healthy quinoa salad recipe that is both delicious and easy to prepare.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring 2 cups of water to a boil and add the quinoa.
  3. Reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy.
  4. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. If desired, sprinkle feta cheese on top before serving.

Notes

  • Quinoa can be cooked ahead of time and stored in the refrigerator.
  • This salad can be served cold or at room temperature.
