A quick and healthy quinoa salad recipe that is both delicious and easy to prepare.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring 2 cups of water to a boil and add the quinoa.
- Reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy.
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- If desired, sprinkle feta cheese on top before serving.
Notes
- Quinoa can be cooked ahead of time and stored in the refrigerator.
- This salad can be served cold or at room temperature.
- Feel free to add other vegetables or proteins as desired.
