- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup dulce de leche
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- Whisk together the flour, baking powder, cinnamon, and salt in another bowl.
- Gradually fold the dry ingredients into the creamed mixture.
- Roll tablespoon-sized scoops of dough into balls and place them on a lined baking sheet.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
- Spread dulce de leche on the bottom of one cookie and place another on top to make a sandwich.
Notes
You can prepare the cookie dough in advance and refrigerate it for up to three days. Consider using vegan butter for a dairy-free version.
