  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • Salt and Black Pepper to taste
  • 1/2 cup Ranch Dressing
  • 12 Chipotle Peppers in Adobo Sauce (optional)
  • 1 teaspoon Garlic Powder
  • 1 cup Fresh Chopped Tomatoes
  • 1/2 cup Diced Red Onion
  • 1/4 cup Fresh Cilantro Leaves
  • Jalapeño Slices or Chopped Green Chili (optional)
  • 1 cup Lettuce or Spinach (optional)
  • 1 cup Shredded Cheese (Monterey Jack or Cheddar)
  • 1 cup Sliced Avocado or Guacamole
  • 1 cup Cooked Rice
  • 4 Tortillas

Instructions

  1. Marinate the chicken: In a mixing bowl, whisk together the olive oil, lime juice, minced garlic, chipotle chili powder, smoked paprika, cumin, salt, and black pepper. Coat the chicken thoroughly and let it marinate for at least 30 minutes; for maximum flavor, marinate overnight.
  2. Grill the chicken: Heat your grill or grill pan over medium-high heat. Once it’s hot, place the marinated chicken on the grill. Cook until golden brown with char marks, 6-7 minutes per side, or until the internal temperature reaches 165°F. Rest for 5 minutes before slicing.
  3. Make the chipotle ranch dressing: In a blender, combine the ranch dressing, chipotle peppers (if using), lime juice, garlic powder, and salt. Blend until smooth and creamy.
  4. Warm the tortillas: Briefly warm your tortillas in a skillet or microwave until soft and pliable.
  5. Assemble the burrito: On each warm tortilla, place a scoop of rice (if using), sliced grilled chicken, chopped tomatoes, diced onion, cilantro, shredded cheese, lettuce, avocado, and drizzle with chipotle ranch dressing.
  6. Wrap it up: Fold the sides of the tortilla in and roll it snugly around the filling. Enjoy warm!
