- 2 cups cooked chicken (shredded)
- 8 slices bacon (cooked and crumbled)
- 2 cups Mexican cheese blend (shredded)
- 1/2 cup ranch dressing
- 1 cup tomatoes (diced)
- 1/4 cup red onion (finely chopped)
- 2 tbsp fresh cilantro (chopped)
- 2 tbsp butter (for cooking)
Instructions
- Mix the shredded chicken with the ranch dressing in a mixing bowl, ensuring the meat is well-coated. Add in the crumbled bacon, diced tomatoes, red onion, and chopped cilantro.
- Layer one flour tortilla with cheese, followed by a scoop of the chicken mixture, then more cheese, and fold in half.
- Heat 1 tablespoon of butter in a skillet over medium heat.
- Cook the quesadilla for 2-3 minutes on one side until golden. Flip and cook for another 2-3 minutes.
- Serve hot, cut into wedges, and garnish with cilantro or ranch.
Notes
Prep chicken ahead of time using rotisserie chicken for convenience. Customize with jalapeños or other veggies.
