Instructions
- Preheat your oven to 375°F (190°C) and line a jelly roll pan with parchment paper.
- In a mixing bowl, beat the eggs and granulated sugar until thick and pale.
- Add in the vanilla extract and mix well.
- In another bowl, combine the flour, baking powder, and salt, then gradually fold into the egg mixture.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes.
- Once baked, remove from the oven and let it cool slightly before rolling it up in the parchment paper.
- While the cake cools, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Unroll the cooled cake, spread the whipped cream filling evenly, and re-roll the cake carefully.
- Chill in the refrigerator for at least 1 hour before serving.
- Decorate with sprinkles and slice to serve.
