- 2 pounds potatoes, peeled and diced
- 6 hard-boiled eggs, chopped
- 1 cup mayonnaise
- 2 tablespoons mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped green onions
- 1/4 cup sweet pickle relish
Instructions
- Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
- In a large bowl, combine the mayonnaise, mustard, apple cider vinegar, salt, and pepper.
- Add the cooled potatoes and chopped hard-boiled eggs to the bowl and mix gently.
- Stir in the green onions and sweet pickle relish.
- Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
