Description

Experience the vibrant flavors of Louisiana with this creamy, spicy Mardi Gras Pasta featuring shrimp, Andouille sausage, and colorful bell peppers, all enveloped in a Cajun-inspired sauce.

Ingredients

Scale
  • 12 ounces Penne Pasta
  • 1 pound Boneless Skinless Chicken Breast
  • 1 pound Shrimp
  • 8 ounces Andouille Sausage
  • 1 cup Bell Peppers
  • 1 small Red Onion
  • 3 cloves Garlic
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese
  • 2 tablespoons Cajun Seasoning
  • 2 tablespoons Olive Oil
  • To taste Salt and Pepper
  • 2 tablespoons Chopped Parsley

Instructions

  1. Boil a large pot of salted water, add penne pasta, and cook until al dente. Reserve about a cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat, add cubed chicken breast, season with salt and pepper, and cook until golden brown.
  3. Add sliced Andouille sausage to the skillet and sauté until browned and smoky.
  4. Toss in bell peppers, red onion, and minced garlic, and sauté until vegetables are tender.
  5. Pour in heavy cream and add Cajun seasoning; stir to combine and let simmer, adjusting with reserved pasta water as needed.
  6. Add drained penne to the skillet, tossing to coat in the creamy sauce.
  7. Fold in shrimp and stir until they turn pink and are fully cooked.
  8. Garnish with fresh parsley before serving.

Notes

This dish can be prepared ahead of time. Store chopped vegetables and proteins separately in the fridge. For a lighter dish, use half-and-half instead of heavy cream.
