Description

A quick and luxurious dish featuring tender cod fillets enveloped in a silky roasted red pepper sauce infused with smoked paprika and dried oregano.


Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Roasted red peppers
  • 1 cup Vegetable broth
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • Salt & Pepper to taste
  • 4 fillets Cod
  • 2 tablespoons Fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add diced onion and sauté for 3-4 minutes until translucent, then add minced garlic and cook for another minute.
  3. In a blender, combine roasted red peppers, vegetable broth, smoked paprika, oregano, and a pinch of salt and pepper; blend until smooth.
  4. Pour the sauce into the skillet with onions and garlic, bring to a gentle simmer, and cook for 5 minutes.
  5. Season cod fillets with salt and pepper and place them in the simmering sauce. Cover and cook for 6-8 minutes until the fish is opaque and flakes easily.
  6. Serve immediately, garnished with chopped parsley.

Notes

For a crispy exterior, consider air frying the cod or baking it with the sauce. The roasted red pepper sauce can be made ahead of time and stored in the fridge for up to 3 days.
