- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup dark chocolate, melted
- 1 cup fresh raspberries
- ¼ cup raspberry puree
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine chocolate cookie crumbs and melted butter; press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese until smooth; add sugar and vanilla, mixing until well combined.
- Add eggs one at a time, mixing well after each addition.
- Stir in melted dark chocolate until fully incorporated.
- Pour half of the cheesecake batter over the crust.
- Drop spoonfuls of raspberry puree and fresh raspberries over the batter; swirl gently with a knife.
- Pour the remaining cheesecake batter on top and repeat the raspberry swirl.
- Bake for 55-60 minutes or until the center is set but slightly jiggly.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
- For a more intense chocolate flavor, use high-quality dark chocolate.
- Make sure all ingredients are at room temperature for a smoother batter.
- Garnish with additional raspberries and chocolate shavings before serving.
