Ingredients

  • ½ cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup dark chocolate, melted
  • 1 cup fresh raspberries
  • ¼ cup raspberry puree

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine chocolate cookie crumbs and melted butter; press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese until smooth; add sugar and vanilla, mixing until well combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in melted dark chocolate until fully incorporated.
  6. Pour half of the cheesecake batter over the crust.
  7. Drop spoonfuls of raspberry puree and fresh raspberries over the batter; swirl gently with a knife.
  8. Pour the remaining cheesecake batter on top and repeat the raspberry swirl.
  9. Bake for 55-60 minutes or until the center is set but slightly jiggly.
  10. Let cool, then refrigerate for at least 4 hours before serving.
