Ingredients

- 2 cups melon, diced (such as cantaloupe or honeydew)
- 1/4 cup red onion, finely chopped
- 1/4 cup poppy seeds
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced cucumber, melon, and red onion.
- In a separate small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Sprinkle the poppy seeds on top and mix lightly.
- Chill in the refrigerator for at least 30 minutes before serving.
