Ingredients

  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup green beans, chopped
  • 1 cup zucchini, diced
  • 1 cup small pasta (like ditalini)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a crockpot, combine all the ingredients except for the pasta and parsley.
  2. Stir well to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, add the pasta to the soup.
  5. Once the pasta is cooked, taste and adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley.

Notes

  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • It freezes well; just leave out the pasta and add it when reheating.
  • Feel free to add any other vegetables you have on hand.
