  • Butter for frying

Instructions

  1. Prepare the filling: In a medium bowl, mix the softened cream cheese, blueberries, and your chosen sweetener until creamy and well combined.
  2. Make the dough: In another bowl, combine the almond flour, coconut flour, baking powder, egg, and vanilla extract. Mix until a soft, pliable dough forms.
  3. Roll out the dough: Lightly dust your work surface with almond flour, and roll the dough into 1/4-inch thick sheets. Cut the sheets into rectangles for easy rolling.
  4. Assemble the roll-ups: Place a generous spoonful of the blueberry mixture at one end of each rectangle, then roll it tightly, tucking in the sides to maintain all the delicious filling.
  5. Heat the butter: In your non-stick skillet, melt a good tablespoon of butter over medium heat, letting it sizzle.
  6. Fry the roll-ups: Carefully place the assembled roll-ups seam-side down in the skillet. Fry for 2–3 minutes until they turn golden and crispy, then flip and fry the other side.
