- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Sweetener to taste (erythritol or stevia)
- Butter for frying
Instructions
- Prepare the filling: In a medium bowl, mix the softened cream cheese, blueberries, and your chosen sweetener until creamy and well combined.
- Make the dough: In another bowl, combine the almond flour, coconut flour, baking powder, egg, and vanilla extract. Mix until a soft, pliable dough forms.
- Roll out the dough: Lightly dust your work surface with almond flour, and roll the dough into 1/4-inch thick sheets. Cut the sheets into rectangles for easy rolling.
- Assemble the roll-ups: Place a generous spoonful of the blueberry mixture at one end of each rectangle, then roll it tightly, tucking in the sides to maintain all the delicious filling.
- Heat the butter: In your non-stick skillet, melt a good tablespoon of butter over medium heat, letting it sizzle.
- Fry the roll-ups: Carefully place the assembled roll-ups seam-side down in the skillet. Fry for 2–3 minutes until they turn golden and crispy, then flip and fry the other side.
- Serve warm: Dust with powdered sweetener or serve with a dollop of whipped cream for extra flair. Each bite will warm your heart!
